[от лат. родового названия Arachis (hypogaea) — земляной орех]компонент витамина F, незаменимая ненасыщенная жирная кислота [CH3(CH2)4(CH=CHCH2)4(CH2)2COOH]. А.к. — исходный материал для синтеза простагландинов; у животных организмов содержится в крови, печени и мозге. При гидрировании А.к. образует арахиновую кислоту, встречающуюся в маслах бобовых растений, в частности арахиса. Отсутствие А.к. в пище подавляет рост молодых животных, угнетает репродуктивную функцию половозрелых, вызывает дерматиты, уменьшает коагулирующие свойства крови. Выделяют из печени крупного рогатого скота. Используют в медицине, в косметических изделиях в качестве питательной добавки.Толковый биотехнологический словарь.
